🔆Creamy Vegan pasta 🔆

Vegan pasta? Pasta with no cheese? 

If you told me a month ago I could have a creamy pasta with no cheese, I would of laughed in your face! 

However, I cooked an awesome recipe that was just delightful. 

Ingredients 

  • 5 tomatoes
  • Herb de Provence 
  • Olive oil 
  • Kale
  • Onion 
  •  Fenal bulb 
  • Celery stick 
  • Basil 
  • Coriander
  • Parsley 
  • Veg stock 
  • Dry pasta 

✖️Cut 5 tomatoes, drizzle with herbs de Provence, olive oil and balsamic vinegar, place in the oven and for an hour or as long as you have got on a low heat. 

✖️Wash a packet of Kale, drizzle with oil and salt, place in the oven for 10 mins.

✖️Place the following into a food processor;   Half an onion, Fenal bulb, bunch coriander, bunch of basil, 2 tbsp olive oil, bunch of parsley and 1 celery stick.

✖️Fru of the mixture in a pan for 5 minutes. Add the 300g of dry white fusli pasta. 

✖️Add 1 tbsp of veg stock to the pasta/mixture then cover with cold water and boil until cooked. 

✖️No need to drain- the water soaks the mixture into the pasta. Add olives or anything you fancy. 

✖️Place all in a bowl and enjoy! 

Top tip: don’t buy fresh pasta, any Italian  will tell you that it’s not fresh. Fresh would not last longer then a day. It’s best to buy good quality dry pasta with durum wheat inside, or even better; make your own!
