πŸ”† Thai prawn salad πŸ”†

SUMMER IS OFFICALLY HERE! 

What better way to kick start this beautiful sunshine then with a spicy Thai prawn salad! You’ll need; 

  • Courgette (sprizlized) or grated if you don’t have a sprilaizer
  • Half a bag of kale 
  • Fresh ginger (inch)
  • Chill flakes (tsp)
  • Bag of frozen prawns 
  • Fresh Coriander (half a bag) 
  • Cashews x 100g 
  • Spring onion x 2 

For the sauce; 

(There’s enough sauce here to save for another day)

  • Soy sauce 
  • Lime x 2 
  • Two tablespoon of olive oil 
  • Inch of fresh ginger 
  • Garlic clove 
  • Pepper 
  • 2 tsp honey

Step 1. Cook the prawns in the chilli flakes and ginger. 

Step.2 Steam the kale gently. 

Step 3. Mix all of the base ingredients up. 

Step 4. To make the sauce blix all of the ingredients up in a nutribullet, or alternatively mix by hand. Mix two table spoons of the sauce with base ingredients. 

Serves two!
